This was supposed to be this week's Sunday dinner, but by the time Brianna and I left the Zoo, we were both pretty dead on our feet, so we went out to eat instead. With plenty of fresh ingredients in the fridge, I knew I had to cook tonight, however. I couldn't let that deliciousness go to waste.
It's a very simple stir-fry. I marinated strips of boneless, skinless chicken breast in teriyaki sauce overnight, then cooked them up in the wok. I set them aside in a bowl while I stir-fried the carrots, broccoli, snow peas, and peanuts, then tossed them back in right before the end. I'll admit the rice was one of the Uncle Ben's 90-second pouches. It would have been the perfect amount for two, but since it was just me tonight, Angel got a nice treat of the rest of the rice after I finished. I can't stand re-heated rice.
The beer was Sapporo, served as usual in my Keepsie's Bar pint glass.
I have to say the carrots were incredible. I got all the fresh produce at Super Cao Nguyen, and I found these enormous carrots there, one nearly two inches in diameter at the thickest. They were absolutely delicious in the stir-fry, and I'm looking forward to most likely eating the rest raw this week.
